I started by inputting on the SI page, then "graduated" to adding more details in the individuals sheets (income,expenses, assets). At one point went back and revisited SI, and after adding an item and hitting populate, all the other data I had input into separate sheets was gone, like it wiped everything out. Is this how it works? Is it designed to overwrite and/or wipe clean all other data?

Yes, when you do an import from the Simplified Inputs page it overwrites all other data inputs. That's why it asks you "Are you sure you want to clear all other data input fields?" before it proceeds. This page is intended to help you get started using simple inputs but has no further use unless you want to experiment with some completely different simple test cases.
